Meal Prep With Me: Quinoa, Kale and Sweet Potato Bowl.
My quinoa bowl is one of my favorite things to eat. I pretty much eat this at least 2-3 times a week for lunch. It's filling and packed full of nutritious goodies such as roasted sweet potatoes, kale, avocado and bacon.
This recipe is for one serving but I generally cook this is in a 4-5 batch set and this allows for me to have a delicious and nutritious lunch or dinner for a couple of days. Personally, I find that figuring out what to eat at work everyday and constantly buying lunch from restaurants can get costly. With meal prepping, I save money and time while knowing exactly what I'm putting into my body.
