In Nigerian culture, fish heads are often given to the head of household because it's believed to be the best part of the fish and that eating fish eyes makes someone wise.
Growing up with these beliefs, I never shied away from fish heads like my more western counterparts. Through my experiments with fish heads, my favorite way (second to deep frying it till it's irresistibly crispy) is curried and roasted atop a bed of garlicky jasmine rice.
