Roasted Tomato, Mushroom and Broccoli Orzo

Every week I have to meal prep for the week, and despite the all the slaving over the stove, it has become one of my favorite activities of the week! Something about making a bunch of delicious dishes and eating little bits as I go really makes this girl happy. 

Today, I'll be sharing one of my meal prep orzo recipes: Roasted Tomato, Mushroom & Broccoli Orzo.

This dish has easily become a favorite because it's easy to make and is flavorful yet light addition to the day. Often times at work, I opt for smaller meals because that keeps me energetic as opposed to when I eat bigger meals and catch the 'itis.

For this dish, all that is needed are orzo, cherry tomatoes, broccoli, mushrooms(preferably cremini mushrooms), garlic, olive oil, salt and pepper.  for those that are not familiar orzo is a type of pasta that resembles rice. It cooks just like any other pasta in a number of minutes and it's mucho deliciosa!
