Seasonal Eating: Sweet Potato & Spinach Frittata.

'tis the season to be jolly and eat lots and lots of yummy food!(fa la la la la la la la laaaaa)

Today, I'm dishing out a new favorite dish; my sweet potato frittata! This fluffy egg dish has the heartiness and sweetness of the potatoes, the earthiness of the spinach and the slight spicy kick from the jalapenos that'll tickle anyone's tastebuds.

Ingredients:

  • 4 eggs
  • 1/2 cup of grated sweet potatoes
  • 1 cup of spinach
  • 1 small jalapeno
  • 1 small white onion
  • 1 small sprig of rosemary
  • 2 tablespoons of olive oil
  • a dash of paprika
  • salt and pepper to taste.
  1. Heat olive oil in a cast-iron skillet  or pan over medium heat and once hot, saute the onions.
  2. Pre-heat the oven to 400 degrees.
  3. Once the onions are soft, add the jalapenos and saute for two minutes.
  4. While the jalapenos and onions are cooking, add a splash of water to the sweet potatoes and  microwave for two minutes.
  5. Add the spinach to the skillet and let it cook down.
  6. Add the microwaved potatoes to the skillet and saute together.
  7. While the filling is cooking, whisk the 4 eggs.
  8. Add the eggs to the sweet potato filling.
  9. Add paprika, rosemary, salt, pepper and mix it all up.
  10. Bake the frittata in the oven for 15 minutes until it rises and puffs up.
  11. Slide a knife and it comes out clean, the frittata is ready for consumption 😊

When I made this recipe, I paired it with Trader Joe's Green Dragon Hot Sauce  and a buttered English muffin because I'm a carb queen. The frittata can definitely be enjoyed all by it's lonesome and would pair perfectly with bacon, if you're into that.
